Skirts & Tacos!
What does a skirt have to do with taco??? Well skirt steak of course! This piece of meat is very fiberous and and can be tough, but I can put the tender in this tough guy by marinating and cutting against the grain. Makes a great choice for taco night! Full of flavor and great texture.
I like a crunchy slaw and creamy guacamole to compliment my taco. Those recipes are included too. Super easy!
Ingredients:
Skirt or flank steak
Rub of your choice. I used a coffee garlic rub in this recipe.
Salt
Olive oil
Pepper
Tortillas
Guacamole
2 avocado diced
1 tbsp red onion
Salt
Pepper
2 limes juiced
Sprinkle of Adobo
Jalapeño to taste
Dash of hot sauce to taste
Mix up all I ingredients and taste for seasoning. Adjust if needed.
Slaw:
2 cups red cabbage
8 ounce plain yogurt
Fresh lime juice
Salt pepper
Mix all ingredients and taste for seasoning.
Steak:
Before cooking heat grill to 400.
Rub steak with olive oil then cover with rub, salt, and pepper. Put in plastic bag and let it marinate for several hours.
Cook steak for 6 min each side for medium.
Let it rest for 10 min after cooking.
Cut in very thin slices against the grain. Thinner the better here.
Heat the tortillas on the grill until soft and they start to blister. Doesn't take long.
Place meat on tortilla followed by guacamole then slaw.
You can add any other side as you desire. Like fresh diced tomato, grilled corn, cheese, choices choices...
