Maple & Cupcakes!

What is more fall than maple right?  So it's only appropriate to create a maple cupcake to honor fall and the selfless maple trees for giving us their sap!  Well yes I know humans created the evaporation process that turns the sap into the wonderful amber syrup we all know and love, but you get my point....

Because my cooking/baking philosophy is about the "real", I wanted a cupcake that used real maple instead of the extract.  After adjusting the sugar and liquid ratios (baking is a science after all), I am happy to say that the maple cupcake test was successful.  I had my concerns at first because the butter, sugar, and syrup didn't cream the way it normally does.  It needed to be creamed longer, and the end batter was almost the consistency of a soft peanut butter. 

Well no guts no glory so I put the batter in the liners, and in the oven my maple tests went.  They baked for 18 minutes, but I could have taken them out at 16 (note to self...). 

The end product was delish!  They are soft, pillowy, and full of maple flavor.  I plan to fill, frost, and sprinkle them with bacon, but that's another test day.  This engineer by day and food tester by night is sleepy....

  1. still the TEASE!!!! Here I was salivating at the thought of baking this wonderful creation, only to discover there was no recipe yet listed. I shall cry my self to sleep...
