Turkey Pom Panini Anyone?
Here’s a really fast meal that satisfies, a turkey pom panini. Think about crusty bread, melty creamy cheese, and the crunch and tang of pomegranate seeds all playing their part in this panini play. Forget the overpriced sandwich shop, make an oooie gooie panini at home! Of course as with all my recipes there are some key ingredients that either makes or breaks it. Firstly use ciabatta bread (translates to slipper because of its elongated shape) because it’s long and flat providing a great surface area for the crusty goodness. Secondly use good extra virgin olive oil because it’s the star condiment. See that’s it, not too many rules… You can either make this in a panini press or in a pan – either ways its delicious and just perfect for the crisp fall nights.
You can also add thinly sliced green apple to increase the tart factor. Enjoy!
One loaf ciabatta bread (cut into sandwich sized portions)
Pomegranate seeds
Olive oil
Pomegranate jelly (if you can find it)
Salt & pepper
Take the ciabatta portions and split down the middle to expose the soft crumb of the bread. Drizzle both sides of bread with the olive oil. Spread a thin layer of the pom jelly on the bread. Layer the cheese, turkey, and pom seeds (starting and ending with the cheese).
Helpful hints: To stop the seeds from falling out I roll them securely in a piece of turkey. Also, if using a pan weigh down the sandwich with a heavy plate or another pan.
